A warm, creamy dip perfect for chilly weather. The slight tang of goat cheese paired with savory seasonings and roasted garlic will have everyone coming back for more.

Serve with your preferred seasonal veggies or sliced and toasted baguettes for an easy and elegant spread.

LC Come Together Recipe Hot Goat Cheese Dip 500x485 2x

Ingredients

  • 2 heads of garlic
  • Approximately 3 TBS high quality olive oil
  • Salt and pepper
  • 1 8 oz. Laura Chenel Original Log (For even more umami goodness, you can substitute 2 4 oz. Truffle logs)
  • ¼ parmesan cheese, finely grated
  • 2 tsp fresh thyme
  • Selection of fresh seasonal vegetables, sliced for crudite, French bread or crackers for serving

Instructions

  1. Heat oven to 375 degrees F
  2. Trim the top of your heads of garlic, drizzle with oil
  3. Season with salt and pepper and place face down on a baking dish
  4. Roast garlic for approximately 30 minutes, until soft
  5. Remove from oven and allow to cool
  6. Decrease oven temperature to 350 degrees F
  7. While it comes to temperature, mix goat cheese (at room temperature), grated parmesan and fresh thyme in a medium sized mixing bowl
  8. Squeeze softened garlic into bowl (reserve a few cloves for garnish)
  9. Mix all ingredients well with a fork, season to taste
  10. Spoon mixture into an oiled baking dish
  11. Back for 15-20 minutes until warm and melting, broil the top briefly for color
  12. Sprinkle fresh thyme, a few garlic cloves and a drizzle of oil on top to serve
  13. Enjoy with your desired vegetables, crackers or toasted bread
