Fresh Goat Cheese Nachos with Laura Chenel Original Log are a California twist on a perennial crowd-pleaser. Quartered cherry tomatoes and sliced jalapeno marinated in fresh lime juice form a spicy fresh salsa. Whisk fresh goat cheese and milk into a creamy sauce and pour over blue corn chips or your favorite tortilla chips. Serve with lime wedges, Goat Cheese Guacamole, a sprinkle of fresh cilantro or your favorite toppings.

Laura Chenel Goat Cheese Nachos

Ingredients

  • 16oz corn tortilla chips
  • 8oz. Original fresh goat cheese, crumbled
  • 1 cup milk
  • 1 cup cilantro leaves
  • 8oz (1/2 pint) fresh cherry tomatoes, quartered
  • 4 small jalapeño peppers, sliced 1/8" thick
  • 2 fresh limes

Instructions

  1. Arrange corn tortilla chips on a platter.
  2. In a medium bowl, combine quartered cherry tomatoes and sliced jalapeno. Add the juice of one lime. Allow to sit 5-10 minutes, stirring every few minutes, to infuse citrus flavor.
  3. In a small saucepan over medium-low heat, combine fresh goat cheese and milk. Whisk until creamy and combined.
  4. Pour goat cheese sauce over your corn tortilla chips.
  5. Top with quick-pickled cherry tomatoes, jalapeño and fresh cilantro leaves.
  6. Quarter remaining lime and serve on the side for additional citrus flavor.
