Citrus jalapeno goat cheese salad

Ingredients

  • 2-3 large, ripe citrus fruits (Choose from what’s in season! Grapefruit, navel or blood orange), peeled & sliced into rounds
  • 1 tub (6.2 oz.) of Laura Chenel Marinated Jalapeno Chili Goat Cheese
  • 1 whole, ripe avocado, sliced
  • ¼ cup pitted olives (Castelvetrano or Kalamata), halved
  • ¼ cup pistachios, chopped
  • Pinch of sea salt, to taste

Instructions

  1. Layer rounds of sliced citrus with disks of Laura Chenel Marinated Jalapeno Chili Goat Cheese.
  2. Top with sliced avocado, halved olives, and chopped pistachios.
  3. Drizzle with the infused oil from the goat cheese tub and add a pinch of salt, to taste.
  4. Enjoy!
