The combination of lemon, goat cheese and pastry never fails and fits many occasions. A perfect make-ahead dessert, these surprisingly simple and delicious Lemon Goat Cheese Tartlets come together with just three ingredients: Laura Chenel Fresh Goat Cheese pillows, prepared or homemade lemon curd, and frozen mini pastry shells or tartlet shells. Just mix the cheese and lemon curd, fill the tartlet shells and serve with fresh seasonal berries like strawberries, blackberries, raspberries or cherries.

Ingredients

  • 1/2 cup Fresh Goat Cheese pillows
  • 1/2 cup lemon curd, prepared or homemade
  • 12 frozen mini pastry shells or tartlet shells, prepared according to package directions
  • Fresh strawberries or other seasonal berries, sliced, for garnish

Instructions

  1. In a medium bowl, cream together the lemon curd and cheese until smooth.
  2. Spoon the curd into the pastry shells and garnish with berries.
