Fresh gorditas, "little fat ones" in Spanish, are filled with Laura Chenel Spreadable Goat Cheese, refried beans and calabacita huitlacoche, a Mexican side dish of squash, pepper, corn and huitlacoche, a corn fungus that's considered a delicacy in Mexico and tastes almost like black truffle. Topped with fresh, tangy Laura Chenel Crumbles, sour cream-goat cheese sauce and roasted tomatillo salsa, it's a truly authentic taste of Mexico that demonstrates how Laura Chenel goat cheese can be used to elevate a variety of cuisines.
