16oz corn tortilla chips
8oz. Original fresh goat cheese, crumbled
1 cup milk
1 cup cilantro leaves
8oz (1/2 pint) fresh cherry tomatoes, quartered
4 small jalapeño peppers, sliced 1/8" thick
2 fresh limes
Fresh Goat Cheese Nachos
A California twist on nachos with citrusy goat cheese and spicy fresh salsa.
Ingredients
16oz corn tortilla chips
8oz. Original fresh goat cheese, crumbled
1 cup milk
1 cup cilantro leaves
8oz (1/2 pint) fresh cherry tomatoes, quartered
4 small jalapeño peppers, sliced 1/8" thick
2 fresh limes
Instructions
Arrange corn tortilla chips on a platter.
In a medium bowl, combine quartered cherry tomatoes and sliced jalapeno. Add the juice of one lime. Allow to sit 5-10 minutes, stirring every few minutes, to infuse citrus flavor.
In a small saucepan over medium-low heat, combine fresh goat cheese and milk. Whisk until creamy and combined.
Pour goat cheese sauce over your corn tortilla chips.
Top with quick-pickled cherry tomatoes, jalapeño and fresh cilantro leaves.
Quarter remaining lime and serve on the side for additional citrus flavor.
