Preheat oven to 400°F.
Slice bacon into 1/2" squares.
Sauté bacon in a skillet over medium heat until crispy. Drain.
Slice peppers in half, remove any ribs or seeds, and arrange on a parchment-lined cookie sheet.
Fill each pepper with 1 tbsp. spreadable goat cheese.
Top with crisped bacon.
Bake 15-20 minutes until peppers are tender.
